Sago/ साबुदाणा
Friends, today we are going to learn
about the most favourite fasting food(Sago/ साबुदाणा) of Indians.
The sago
is white and round like a small pearl. In India it is made from the roots of
cassava / tapioca and the trunk of a tree called Sago Palm in African. &
that’s the reason why it is Known as “Tapioca” as well.
Sago is
mostly used in making papad, kheer and khichdi in India. It is also used to
thicken soups and other things.
In Maharastra there are some fabulous &
well known recipes of Sago For fasting: - Sabudana kheer, Sabudana Vada,
Sabudana Misal, Sabudana Khichadi.
The first
production India was started in the Tamil province of Salem in 1943-1944 by fish
merchant Mr. Manikkakam Chettiar. For this, the roots of kappa (Tamil: tepioka
is called kappa) are crushed, milked and allowed to thicken, then made like
pearls and then continued with roasting process.
Sago has
carbohydrate prominence and also contains some amount of calcium and vitamin C.
We can
buy three types of sabudana in market,
1.)
Small pearls are between 1mm to 1.5 mm diameter & known as “Motidana” and
popular in Eastern part of India
2.)
Medium pearls are between 2 mm to 2.5 mm diameter & locally
known as “Khirdana”
3.)
Large pearls are between 3 mm to 4 mm diameter & known as
Badadana. It is most popularly used all over India.
Below are
few of the fabulous & famous recipes,
# Sabudana khichadi: -
1 cup
soaked sago, 1/5 tbsp ghee, 1/5tsp cumin seeds, 1 tsp curry leaves, 2 finely
chopped green chili, ½ cup freshly roasted Peanut(60% crushed & 40% whole),
1 cup boiled potatoes, salt(for fasting pink salt/rock salt/सेंधाव मीठ is preferred) as per taste, 1 cup grated
coconut(opptional), 1 tbsp finely chopped coriander leaves.
# Sabudana missal: -
1/2 cup
soaked sago, 1/4 cup steamed peanuts, 3/4 cup steamed potatoes, 1cup fresh
coconut milk, 1 tsp cumin seeds, 2 tbsp ghee, 1 finely chopped green chillies,
1 tbsp finely chopped coriander, sugar & salt (for fasting pink salt/rock
salt/सेंधाव मीठ is preferred) to taste.
